Creativity doesn't stop at art. I love to cook. It's a passion of mine. Creating a new recipe is like creating new art, but everyone get's more satisfaction out of it. Cupcakes are my favorite thing to make. I work anywhere from 50-70 hours a week at my job and I don't get a lot of time to experiment. I have a basic recipe for a white and chocolate cupcake that I use quite often. Links provided . . . Old-Fashioned Chocolate Cupcakes ~8 regular cupcakes / 350 degree oven 1/4 cup (1/2 stick) butter, room temp 1/2 cup + 2 tablespoons sugar 1 large egg, room temp 1/4 cup + 2 tablespoons flour 1/4 teaspoon baking powder 1/8 teaspoon baking soda 1/8 teaspoon salt 1/4 cup high quality unsweetened cocoa powder 1/4 cup milk 1/2 teaspoon vanilla 1. Beat butter until softened. Add sugar and beat until light and fluffy, about 2 minutes. 2 Add egg and beat until well combined. 3. Measure the flour, baking powder, baking soda, salt, and cocoa powder into a small sized bowl and whisk to combine. 4. Measure out the milk and vanilla and stir to combine 5. Add about a third of the dry ingredients to the butter/sugar and beat to combine. Add about a half of the milk/vanilla and beat to combine. Continue adding, alternating between dry and wet and finishing with the dry. 6. Scoop batter into cupcake cups about 2/3’s full. Bake cupcakes for about 22-25 minutes or until a cake tester comes out clean. (from cupcakeblog.com) Then I use my imagination and create wonders like: Chocolate Peanut Butter Cupcakes with Cream Cheese Peanut Butter frosting. It's easy - take a 1/2 tsp of crunchy Peanut butter and put it in the center of the batter before baking. It cooks right into the cupcake. For the frosting take 2 8 oz bricks of Cream Cheese, 1/4 cup peanut butter (Do not use the kind that separates! It will be a mess. Use Skippy, Jiff or any other kind you like) 3 cups Powered sugar and 2 tsp vanilla. Mix well with a mixer. The frosting will be a pretty, shiny, thick frosting. Put a huge dollop on top of your cooled cupcake and top with honey roasted nuts! Perfection! WARNING - must have milk to fully enjoy! I have yet to try a Sweet Basil cupcake with Lemon Cream frosting. Just an idea I'm cooking up. . . If you think it sounds good or if you want more recipes. Just let me know. I'll post more!
